New Culinary Workshop Series
Join Us for Hands-on Interactive Courses

Many components of sustainable systems draw on a specialized skill set and body of knowledge and are best learned in an intensive setting that combines theory and practice. This unique series of courses will immerse you in various aspects of sustainable food systems. You'll work with sustainability faculty or practitioners to explore and apply theory and knowledge in a workshop format. The workshops will culminate in an interactive culinary class, in which participants will discuss the elements of a healthful plant-based diet, share bioregional ingredients and cultural food traditions, and cook together in their own kitchens. Each course workshop will be followed with a practical final assignment. Each workshop is one credit ($774 per credit plus fees).

Pulses Nutrition and Culinary Workshop
October 19-November 8

This hands-on course will review the health and environmental benefits of pulses within plant-based diet patterns, as well as the various types of pulses that are present within cultural food traditions.

Mediterranean Dish

Mediterranean Diet Nutrition and Culinary Workshop
November 9-November 29
Register by October 19
This course will review the health and environmental benefits of traditional, plant-based Mediterranean diets, as well as the various types of whole foods within these cultural food traditions.

Sharon Palmer, MSFS, RDN is a registered dietitian who is passionate about plant-based, sustainable eating.
