This hands-on course will review the health and environmental benefits of a plant-based diet, as well as the various foods and food groups within a healthful, balanced plant-based diet pattern. The workshop will culminate in an interactive culinary class, in which students will discuss the elements of a healthful plant-based diet, share bioregional ingredients and cultural food traditions, and cook together in their own kitchens. This workshop will be followed with a practical final assignment
Demonstrate knowledge on how
Plant-based diets impact human health, as well as planetary health.
List the food groups, types of food consumed, nutrient intake, and health outcomes for these plant-based eating patterns.
Identify plant-based ingredients in particular bioregions and food cultures.
Develop culinary competency related to plant-based cooking techniques.
